I sold wholesale scapes (not bunched; just packed loosely into a large vented plastic bag) for 3.00 a pound last year. The restaurant that took most of them was very happy to get them.

While they are a "by-product", they're highly useful; plus which it's a whole lot faster to snap them and leave them in the field than it is to carry them out of the field, pack them, refrigerate them, market them (including researching prices!), and take them to the customer.

What research I did gave highly varied results as to prices, though. I'm also curious to see what others got for these.
