I sold a peck basket of organic paste tomatoes for $10 at market on Sunday and she was glad to get them. Most were in great shape. Very few had a trimmable spot here or there. I don't know how many others would pay the price. Due to our wet weather, I am getting lots of heirlooms "cracks".

Andy--
If you check the current pricing for wholesale organic tomatoes at the terminal markets right now, you will find you are probably underpricing.
My strategy has always been to price these at what I believe to be a reasonable price initially---minimally based on cost plus----more if the competition's pricing shows something even higher. I can always come down in price if I find it seems to not be working.
You have all the power because you have the product. It isn't the other way around.
You may be working far too hard for the profit you are making.

http://lists.ibiblio.org/mailman/options/market-farming$10 for a 25# box of certified organic seconds, but only to people I know. I won't sell seconds on the open market. I'm getting $2.00/lb for good tomatoes by the quart and sell boxes to my CSA members at $15 for a 10# box and $25 for a 25# box.
I wish I had your customers, I don't think I could sell any at $4.00/lb which equates to $8.00/qt.
