Recipes for garlic and pepper sprays are pretty abundant on the net. I haven't had any conclusive experience myself, but am continuing to experiment informally.

This year, I'm turning my abundant crop of habaneros into fermented pepper sauce that will keep until next year, and give us a nice gourmet table item in the meantime. Here are some instructions: http://www.pickl-it.com/blog/410/3-way+pickled+peppers/

(No need to buy the expensive, admittedly very beautiful, Pickl-It jars. Purchase the airlocks and rubber plugs at your local brew shop for 99 cents apiece, drill a hole and install them in canning jar lids that you can screw on half gallon jars, etc.)
