I had the same problem in my self-serve farmstand. I tried bagging everything in plastic bags, which worked, but grew tired of the waste. I then purchased a few clear plastic/lexan (cambros) food containers with lids from a restaurant supply store and that helped quite a bit. Just bunch the onions/greens and display them in the containers with the lids on.
