I don't know of a cure for wilted spinach, but if you keep it cool and moist it will hold up OK. We bring it in from the field in 1 7/8 bushel totes as soon as the patch is picked, wash it within 1-2 hours and store it in the walk-in in 7/8 bushel grape totes. It holds up OK this way for several days in the walk-in. If I was going to try to store for longer than 2-3 days, I would look into some sort of bagging system.
