Tom; I've done that with leeks, and it kept them fresh all day (they wilt if left out on the table). I put a bag over the jar and kept them in the fridge at night, changed the water in the morning, and they looked great the next day, too.

Liz, Thanks for the advice -- I was able to find a web blog that
suggested a quick rinse and then store the scallions with roots and
the white part covered with water in a glass bowl. Then, enclose the
tops and glass bowl with a plastic bag -- finally, put the bowl with
scallions in the cooler. I tried this and can only say that my
picking looked good with overnight storage and I sold out at the
market this morning. Has anyone else tried the glass bowl and plastic
bag routine? Results? Thanks, Tom
