I'm confused about salad spinners.
I think the idea is that you are trying to wash dirt off the lettuce.
But doesn't the water wilt the lettuce?
Does the water have to be cold?
Does the process "crisp" the lettuce. If it does get crisper, is that because of water absorbtion or because of temperature?
Is part of the goal to remove the heat of the field to get it to a storage temperature?
Doesn't the process crush the lettuce?
