Andy, do you mean cover crops...as in those plant species that prevent soil eroison and a few of which are also green manure crops? Most of those are grains/grasses/legumes and many combinations can be planted according to your particular preferences/requirements. Some cover crops are also rich sources of nutrition for grazing animals.
If you mean groundcovers, in a horticultural way, entirely different plants would be recommended.
