I've had fair luck with carrots. Both in sandy and fairly heavy soil.
I tend avoid the heavy soil because the carrots are so difficult to
harvest. They do germinate slowly and grow slowly (100-120 days?)
which makes weed control tedious. Here in central Texas, they are a
winter and early spring crop. We just finished harvesting carrots; the
last ones were too old. I think we started pulling carrots back in
February.

If you have success with spinach, you might try planting carrots at the
same time. I have planted carrots WITH spinach and had fair success;
long after the spinach was done, we pulled carrots.

Seems like I have heard of spraying kerosene or diesel over the top of
carrots for weed control. Another of those barely believable cultural
practices, like salting asparagus. I have tried neither.
