Lamb’s Quarter Salad

Poppy Seed Dressing

1 cup fruit juice of choice

½ cup honey

¼ cup basil vinegar

2 tsp poppy seed

1 tsp salt

6 cloves wild garlic, chopped

Salad:

2 cups lamb’s quarter

½ cup violet leaves and flowers

¼ cup chickweed tips

½ cup green briar tips

1 11-oz can mandarin oranges, drained and chilled

¼ cup walnut pieces

¼ cup chopped spearmint

            Process juice and next 5 ingredients in a blender; set aside.  To prepare salad, combine lamb’s quarters and remaining 6 ingredients.  Serve with poppy seed dressing. 

 

Lamb’s Quarters Stuffing

2 cups grated zucchini

1 cup sliced mushrooms

1 cup grated tart apple

1-2 Tbsp vegetable oil

1 pound mashed tofu

2 cups lamb’s quarters leaves

¼ cup tamari soy sauce

2-3 Tbsp wine or sherry

2-3 Tbsp lemon juice

3-6 cloves garlic, chopped or minced, or to taste

¼ tsp each nutmeg, thyme and white pepper or to taste

a little rice and some chopped nuts (optional)

            Sauté the zucchini, mushroom and apple in the oil.  When soft, cover and add the remaining ingredients. Cook 10 minutes more on low heat.

 

Lambs Quarter Pie

Pastry for 2-crust 9-inch pie

3 eggs

1 large onion, chopped (1 cup)

3 Tbsp butter or margarine

1 cup cottage cheese (8 oz)

8 oz feta cheese, crumbled

2 cups cooked lambs quarter, drained

½ tsp salt

¼ tsp pepper

            Roll out half the pastry and line 9-inch pie pan.  Separate 1 egg, then brush egg white on pie shell.  Pour excess white into large bowl; add yolk and remaining 2 eggs; set aside.  In skillet sauté onion in butter until tender.  Meanwhile beat eggs; stir in cheese, lambs quarter, salt, pepper and onion.  Turn into pie shell.  Roll out remaining pastry, fit cover the pie and crimp edges. Bake in preheated 425F oven 30 minutes or until crust is brown.  Cool on rack for 10 minutes.  Cut in wedges.
