They can be allowed to get longer than most cucumbers before picking.
But the key is when the seeds begin to size up and mature. It's been awhile
since I've grown them but if I remember right. They're at their best at
about 15"-18" long. After that they begin to thicken and the seeds start
getting tougher. It certainly doesn't hurt to pick them smaller and they're
really tender then.
