My experience with other kinds of cauliflower (purple, white, green)
suggests that you may not have to but you might want to tie it up. The color
will be greatly improved (brighter, clearer) if you tie it up. Monte
Packaging used to sell rubber bands designed for the purpose. They make it
musch easier. You slip a couple dozen over your wrist like a wrist-band.
Then you can use the same hand to gather the leaves. While holding them you
then use your other hand to slip the rubber band over the leaves. It goes
pretty fast that way and I think it's worth the effort once the product gets
to market. Monte's website has been posted here before. By the way, other
rubber bands might not work because sunlight will deteriorate them. The
cauliflowrer bands are pretty heavy duty. They become handy for other things
as well.
