My very favorite:

Baked Ratatouille
1/4 cup olive oil
2 garlic cloves, crushed
3/4 tsp salt
1/2 tsp dried rosemary (or sprigs of fresh)
1/4 ts coarsely ground black pepper
1 small eggplant
3 plum tomatoes
2 small zucchini
4 red potatoes

preheat oven to 425.
In small bowl stir oil, garlic, salt, rosemary, and pepper. (or place
rosemary sprigs on top of vegetables)
In 15"by10" glass or ceramic baking dish slice all vegetables and arrange in
rows (I stand on end). Drizzle olive oil mixture over and bake 30-40
minutes. You will want to eat the whole thing. You can substitute or add
any veggies. I like more tomatoes and potatoes and use various peppers.

Cucumber Salad
1/2 cup chopped onions
2 cup chopped tomatoes
3 1/2 cup chopped cucumbers
1/4 tsp celery seed
3/4 tsp dill weed
1/4 tsp salt
1/4 tsp garlic powder
1 cup sour cream (I use a cashew-sunflower mayo)
Put all ingredients into bowl and gently mix. Serve or chill. Wonderful!!

Cashew and sunflower mayo
1/4 cup each sunflower seeds and raw cashews
1/2 cup water
1/4 cup lemon juice
1/2 t sea salt
1/4 t garlic powder
1/4 t dry mustard
1/2 cup olive oil

1. grind seeds and nuts in blender
2. add water and lemon juice
3. add seasonings
4. pour in olive oil slowly while blender is running
5. process until thickened.

Note: sunflower and cashews will surprise you what they do when blended. I
use cashews frequently for sauces/fruit ice cream.

Wendy,
Thanks for the recipe.  I'll add it to my handouts as it utilizes a few of my
products.
 
Does anyone have any recipes to add that would use any of the following;
tomatillos
mint
cucumbers (any good Raita recipes out there??)
