Hi Joan -

My wife and I are making all sorts of preserves from vegetables and fruit we
(mostly) grow ourselves. We're certified organic, so all of our fruit/veg
ingredients are organic as well - although we're not a certified handler so
we can't call them "organic preserves", just list organic ingredients.

Anyway, we've made some interesting and unusual things. We're in Sonoma
County, which has been known for a long time for Gravenstein apples. This
coming year we're managing an acre of them on a new property, so we will have
a whole lot of apples to play with. Some things we plan on are apple butter
and spiced apple rings.

Some other interesting things we make include four kinds of marmalade, bread
& butter pickles, strawberry-raspberry jam, peach and nectarine jelly, and
brandied pears.

We sell all of them directly at the farmer's markets, and they account for
probably 30-40% of our sales, especially during the off season.
