Shallots can be grown similar to onion sets or garlic. A clove
is set in the ground and lightly covered. It will grow leaves, size up the bulb
and split the bulb into new cloves. It's one of the simplest crops to grow.
Unlike garlic, it can be planted in the Spring for a late Summer/Fall harvest.
Simply undercut the bulbs after they dry down (it can be done earlier). After
several days of drying, pick up, clean up and prepare for sale. There aren't
many varieties. There actually a few that can be started by seed. These need to
be started in the greenhouse early (Late Winter) for planting 8-10 weeks later.
The key to succeeding with onions, leeks and shallots is a consistant supply of
moisture through the season. They have shallow roots so frequent waterings are
necessary to gain size.
