I saw some novel anchors for EZ-UPs this weekend at an art fair. The vendor took 4  3' lengths of 3" pvc pipe and capped one end. Then they filled each with a concrete mix, setting a heavy duty metal eye in each one. After they set up, he used rope to hang one from each corner of his EZ-UP, tying it off at the base of each leg. The weight pulled down on the top corner, yet held the bottom of each leg in place. I thought it looked like a great idea, other than having to handle the weights each time you used the thing.

Instead of sand bags, could you just fill plastic gallon jugs with sand? 
 
If water would be heavy enough, you could transport them empty, filling and dumping at the site.
