Freezer wrap is good for about 3 months, vacuum sealed for 6 months from a
rules standpoint. We will see use by date legislation coming in the near
future that will assure that producers are being honest with their meat
products.

If we approach the 6 month with anything it goes into our personal freezer.
We have had some lamb and beef both get in the bottom of our freezer that
was two years old and it was fine, but I would not want to take a chance on
getting caught selling it. That happens if we get backed up eating the
pastured poultry which takes half a freezer twice a year.

We seldom have meat for resale that is over 90 days old, but occasionally I
may have a package sneak around in the freezer and not get sold with its
cousins. We have each package stamped with a code that identifies the
animal and from that I can tell the packaged date from the animal logs.

Geeze, I don't know the answer to your question but you're making me hungry.

Rib steak (bone in or out). Tell ya what... if you find yourself with an
over supply of these steaks that you just can't move or justify freezing
anymore, ship me a few!

Maybe it's time I tried some of this grass fed beef. I don't believe I have
ever tasted it.

Back to the original question... I have one... how long and at what
temperature can you keep lamb frozen and still expect it to be reasonably
good? I still have 70 lbs of it left in the deep freeze and I am wondering
if I'm going to have to eat lamb twice a week to get through it before the
end of the summer.

I just couldn't resist buying one more 4-H lamb at fair time last summer.
With just the two of us, it's a lot of meat to get through in a year.
