I can sure understand how you have to do this with a CSA, especially with
produce.
With our beef, we can keep it for several months in the freezer and hold it
as needed. But we need to keep moving some inventory, preferably all year
around. Since we normally do not have customers buying much less than $30
and often $60 or more and sometimes (with a steak package) well over $100
for one transaction, just adding a few transactions can make a big
difference on monthly sales figures. But of course, even after 2 years now
of marketing, our sales are not that big at $8000 for the last CY for the
beef portion of direct marketing.
