If experience is any guide, the lack of proper inspection and regulation of
big producers and processors will continue to endanger consumers whether
it's under the organic label or not. "Organic" will be degraded by cheating
and cost-cutting until it means nothing to the public. Meanwhile, the
regulatory paperwork will overwhelm many small growers. Now I worry that
any new label will be similarly coopted. Grow local, eat local.
