Is it fairly easy to serve food at these events and follow all the
regulations? What license would you need?

The biggest problem that we have here in Wisconsin is to meet the
requirements for temperature control. We must maintain all meat products at
zero F or colder at all times.

Most farmer's markets prohibit meat sales anyway, and our local market
prohibits portable generators to power a freezer.

The neighboring county which has the largest markets due to population no
longer allows even eggs to be sold at the market, much less any meat.

Also, what kind of freezers are you buying to meet the new NSF7
requirements?

We have looked and looked for freezers and except for one company in near
the Twin Cities, that makes an NSF7 certified chest freezer, not much else
seems available. And with that certification, the price doubles from a
conventional home freezer which can no longer be permitted. Plus our local
refrigeration technicians do not want to handle that companies products
because they consider them to be inferior:(

I would imagine that you are in the same situation because I think most all
the states are switching over to the federal rules in order to eventually
allow reciprocal trade outside of your own state.

spectrum strategic thinkers and how our futures are impacted.
