I am another person who likes the idea behind the "authentic Food" term
but I don't really like the term itself much. I feel that many will
lookchem. at the term and go "...right...all food is authentic". The
same way those chemistry wags (i sell food in two college towns) would
make derisive remarks back when we sold "chemical free" produce. They
would point out (and rightly so) that everything was made out of
chemicals so it was impossible to be chem free.
So, what part of agriculture are we using terms like organic or
biological or authentic in response to? Factory farm/Corporate
agriculture, of course. So I got to thinking about using terms that
reflect the difference between use small guys and the big farms. The
term to be used I feel should reflect our identities as small farmers as
opposed to the big guys the USDA supports.
some terms that came to mind are SmallFarm foods, HandCrafted foods
and Microfarm foods (like Microbrew)
