I'd be curious to know how many farmers out there would expect hired help OR
interns to work 14 hrs/day, 7 days/wk (98 hrs/wk)

The US Dept of Labor has enforcable standards. If the operation is
for-profit and is not certified as an educational institution, I would not
want to be in charge of it when the Dept of Labor comes knocking. And they
do visit farms.
