I second the recommendation of maremmas as guard dogs. Neighbors of mine have one who faced off for twenty minutes against a sizable black bear who wandered into the sheep pasture. Lots of posturing on both sides, then the bear walked away. The dog was not extremely aggressive, just adamant about staying between the bear and the sheep. He barked much of the night, after that, perhaps because the bear was still lurking.
This maremma and a co-worker of his are both placid and easy-going dogs under most circumstances, and don't seem to need to be put in their place.
