I've found most European sheep will leave bark alone if they have grass or have never experienced bark eating. Shetland sheep love bark. Finn sheep can be bark eaters. I don't think there are any simple answers to this question. Generally, sheep will go for the grass first and are better than goats or other browsing animals.
