In my case it's not chemicals, though chemicals surely can't be good.  It's possible that it's the result of genetics (and or possibly an environmental exposure early in my life).

I'm one of the unlucky saps to have this wonderful anomaly.  It SUCKS!  Fortunately it only affects my mouth, which causes me, in most cases, to cease eating the offending food rather quickly.  Before I had discovered what it was I had thought that better quality (local/organic) foods would be the cure, not so :-(  Do you know how old it gets trying to explain to people that it's not that you don't like particular foods but rather the foods don't like you?  Fortunately I don't also have allergies to wheat and grains.

Taking antihistamines, for me anyway, reduces the impact, but I really don't like taking them (and don't for the sake of eating).  The only solution, other than avoidance, is to cook everything.  Sigh, I would really have liked to been a raw foods guy...
