Zoe Nelsen and her father, Michael Nelsen, want to teach people how to
create modern-day "victory gardens" to increase their food security.

They run a business called EcoScapes Landscaping, which "designs,
constructs and maintains water-efficient, meticulously crafted,
personalized landscapes," according to an e-mail from Zoe Nelson.

The father-and-daughter team works closely with clients to determine
appropriate services.

"One client may only want access to equipment and labor to prepare the soil
and set up irrigation for their new plot, when another household seeks
ongoing services to grow and harvest the crops throughout the year," Zoe
Nelsen said.

The company's landscape designer is Peggy Wright, who will help clients
design their own victory gardens and lay out a path toward greater
self-sufficiency, Zoe Nelsen said.

EcoScapes can also install a free-standing greenhouse for fresh greens and
vegetables year-round.
