As I understand it the proteins are present in grain but are not converted from carbohydrates. Proteins are nitrogen based and carbos are carbon based. Eggs have the perfect balance of the eight essential proteins for humans. So if you mix grains and legumes what is lacking in one is balanced out by the other. Rice & beans, bread and limas, and the like work well together. High glueten flour (pizza flour) mixed with soy flour will give you a bread with over 17% protein. The book "Diet for a Small Planet" had alot of information on this. The USDA has a site that you can look up the composition of all foods. Hope this does not confuse. Bob C
We can certainly get the protein we need from grains, if wealso eat complementary proteins (legumes being the obvious
choice, dairy products another good choice, and there are
others). We are then 'converting grain's carbohydrates to
high quality protein'.
