Hello Bert,
You have wine connections...
With Niagara facing the grape shortage for another year, and producing wines with 0% Onario grapes, I have an idea.
Not too long ago it was thought that good wine could not be pruduced in Niagara. They proved them all wrong.
However, with the winters becoming more severe, the varietal vines just do not survive anymore.
Now you hear that the only good balsamic vinegar comes from Modema, Italy.
What if Niagara turned to making world class balsamic vinegar with varieties that do survive the changing environment? A bottle of good balsamic costs more than any of the averge bottles of wine coming out of Niagara.
Just trying to make lemonaide from the lemons.
