I have so many questions for you, but I will try to stick to the land-related ones first

2. How can I calculate how much acreage to plant for hay to provide all of our own needs? For other crops for ourselves?.....

5. How can we tell (when considering a property) if a field will need irrigation?

Wow! I just found that the NRCS has posted all their aerial photos and soil data online at this website (this is the page for Oregon, so click around until you get to your state):

http://www.or.nrcs.usda.gov/pnw_soil/or_data.html

There you'll find fertilization advice, estimates for expected hay production for your piece of land, and data on grazing capacity for both irrigated and unirrigated pastures.
