I tend to view this as proof of the superiority of a diet based on roots. They're so high in potassium that you can salt them normally without ruining your health.

Seems to me it is short-sighted to focus on one element of a food. A doctor friend told me years ago that the kidneys can process far more salt than the normal person's palate will tolerate.
As for root crop foods, I recently noted that my joints were speaking to me in much more muted voices. I thought about all the possible causes and I was reminded of a conversation here about the connection between joint pain and potatoes. I have eaten few potatoes in the last six to twelve months, a strong change from my previous diet. That may or may not be the reason for joint ease.
