I would like to know something about metadata and images (i mean JPEG
mainly ). As far as I see the recommended procedure is to include a
visible text and a XML-metadata to a page. But what about JPEG. JPEG
does not have a license field (only a comment)?

There are many metadata formats (EXIF, IPTC, XMP; see http://www.sno.phy.queensu.ca/~phil/exiftool/ for lots of info) that (I assume) extend JPEG's comment mechanism and include a copyright field.

We have a recommendation for XMP at http://creativecommons.org/technology/xmp
