When I was an undergraduate--far too long ago--we learned them as a mnemonic phrase:
"He said, I am willing to eat what you bake, though I perish." I don't recall what the Hebrew would have been...can anybody help?

Hi Pere!
There are in fact five I-aleph roots which follow the o-a pattern you mention. These are:
אכל (to eat)
אמר (to say)
אבד (to perish)
אבה (to desire)
אפה (to bake)
The initial aleph is treated as quiescent in the prefix conjugations (eg. Yiqtol). All other I-aleph roots follow the e-e-o pattern you identified, treating the aleph as a glottal stop.
