In other words, you need to study into the two noun states: construct
and absolute.

זְבָחִים /zevakhim/ is plural absolute.
זִבְחֵי /zivkhei/ is plural construct.

The construct state establishes a relationship between two nouns,
often of possession or modification (similar to an adjective or a
classifier).
