Because you need to include the daytime in which God did his act(s) of
creation.
1) God Created;
2) evening came (ie sunset);
3) morning came (ie sunrise)
and the day was ended. This is the structure of every day of the creation.
People didn't have electric light by which to work at night.
(Just noticed Lee's comment which is a little more succinct than mine.)
