Located in the beautiful Finger Lakes Region of New York, Wellspring Forest
Farm & School serves as a living classroom to connect students to the
forested landscape.



Our classes are experiential and hands-on, giving students real skills and
knowledge and utilizing our living farm classroom and local old growth
forests as teachers.



Past students often comment that our classes help them see the woods from a
whole new perspective. We don't teach only skills, but how to better foster
a long-term relationship with the forest.

Learn forest ecology and management techniques for eastern woodlands
from *Farming
the Woods* co-author Steve Gabriel and renowned elder forester Mike Demunn.
Visit local old growth and heritage forests and farms and practice tree ID,
stand assessment, marking, and thinning techniques. Leave the course more
confident in your ability to assess and manage woodlots.

Explore the wondrous world of fungi and learn how to grow and forage
mushrooms with *Farming the Woods* co-author Steve Gabriel and Olga Tzogas
Smugtown Mushrooms.



During this 3-day intensive course participants will identify wild
mushrooms and learn tree ID and forest ecology, inoculate logs, straw, and
grain, learn low-tech propagation techniques, and of course, cook and eat
mushrooms.



Participants will build their skills in mushroom identification,
cultivation, and propagation and leave the course equipped with the
knowledge and tools.

·      Lifecycle of Fungi

·      Ecology; where to find mushrooms in the woods

·      Safe and ethical wild mushroom harvesting

·      Shiitake and others on logs, stumps, and woodchips

·      Oyster on straw, coffee grounds, and sawdust
