I've been using Kieffer pears for years to make both perry
and pear wine.  If you wait for them to ripen, the specific
gravity of the juice is often between 1.055 to 1.060 which is
fine for perry.  If it is less or if you're making pear wine, add
cane sugar.  Kieffer pears are also good to crush since there
are significant grit cells compared to buttery varieties of European
pears which often require rice hulls to press effectively.
