I would wait until next spring and graft on a scion the same diameter
as the sucker. Grafting is easy and fun. Look on Google for info.
Your apple rootstock will probably put up some suckers. Just wait.
I notice that suckers from my trees tend to die during the winter so
you should consider mulching heavily around and over the suckers this
fall.
