here in zone 5 Chojuro ripens with Bartlett (about right now) - Niitaka a
week later - Korean Giant about 5 weeks after Bartlett - don't have Hosui -
Flavor seems to be the weak point of the species - Chojuro seems relatively
highly flavored, but almost a petroleum taste - Niitaka not too bad -
Korean Giant is the best here, harvested about Oct 7 - often 2-3 days at
room temp after harvest brings a wonderful sweetness to go with the
wonderful texture - I harvested Kosui a week ago - it is my second favorite,
although the trees seem to be more winter tender than other varieties - if
the trees are thinned adequately, i watch for a change in background color
for indicating harvest - if the trees are overloaded, they do not obtain
decent quality - no way to salvage -
