My ginger has gotten nice and fat, but I need to dig the last of it.  I froze what I have dug so far, and will try to sell frozen ginger.  Should I just leave some out to air dry like regular ginger?  Will it develop enough  protective skin?  Am I better off trying to sell it out frozen (sell frozen chicken and duck so can keep it frozen at market).  Thank you.
