Cut the tender growing tips and when they grow back, cut again. Don't cut the woody older growth. Sow thick so it's like giving the bed a haircut. I didn't trellis.

All Pisum sativum have edible leaves, Sugar Snap or Snow or whatever. More cold hardy than lettuce. Mine thrived our winter low of 15F. Grow in my poor soil with a bit of compost. Wrinkled pea seeds are more hardy.

Pea shoots taste great, better than lettuce or collards IMHO and seem to hold up about as well post-harvest. Eat raw or slightly cooked. Gourmet perishable not in organic food supermarket. Customers sample, they buy. Develop a market.

Will shading extend my harvest?
