There are two compounds that growers use to treat tubers for prevention of sprouting; Maleic Hydrazide (MH) and CIPC.  MH is applied in the field several weeks before harvest, CIPC is applied to the tubers as they're placed in storage. Both are meant to prevent sprouting but are effective only when storage conditions are appropriate. That means the tubers will overcome the sprout inhibitor under favorable conditions for growing. But I wouldn't want to try using them for seed potatoes because it could impact their development. They certainly wouldn't be acceptable as organic seedstock.

I've always heard that grocery store potatoes have been treated to prevent them from producing many eyes. Anybody know if that's true?
