My favorite method for potatoes is to "plant" them on top of the soil
and cover them with mulch. I used hay made from our own fields, and
piled it about 6 inches deep. The potatoes came through just fine. The
best part was harvest time: none of the hard digging. Just pull the
mulch off and pick up the potatoes. Actually, it was a little more than
that. Some of the potatoes were in the soil because the roots had gone
down, but the soil was nice and loose and so they were easy to dig with
a garden fork. The hard part is getting enough mulch! It has to be
thick enough that the spuds don't push up through and get sun-greened.

Janet -- how were your yields? I've always heard that mulched potatoes
yield less than hilled potatoes...
