Marlin,

Those incubation trays sound great!

I asked a paint salesman about using Thompson's Water Seal to seal a deck for
a customer. He told me
that it (and others like it) are a paraffin base and require reapplication
every 9-12 months. Labor
intensive and not much protection. (Reminds me of chemical agriculture- keep
'em coming back to buy
more.)

I would suggest using a spar varnish, or better, tung oil or an outdoor
polyurethane. These are in a
petroleum base, usually, so will off-gas until they dry. But leaching isn't
a problem (I don't
think).

There are also food safe oil finishes for countertops, wooden bowls, etc.
that a bowl turner told me
about. Try restaurant or woodworker suppliers. These probably require
reapplication.

There may even be some permanent wood finishes/sealers out there that don't
off-gas now.
