I agree totally with Dave's comments below
on apples for S. Ind. We had them all for many years and they all
had severe problems. Spitz (as Dave says) and Ginger Gold proved to be
most fireblight sensative varieties we grew (and we had 2 epidemic
years).
For a great sauce apple which matures early
I'd choose Pristine (resistant to some diseases) or Transparent.
