Have you figured out a way to de-hull them easily?
No. If by 'not easily' you mean soaking, parboiling, rubbing them, and then
sluicing off the hulls. But like any other homestead task, once it becomes
routine you are listening to the news, discussing what needs to be done to
the southern stretch of fence, or musing about the way things used to be
.... and suddenly you look down and the beans are hulled without you ever
having been fully aware you were doing it. So, as you can see, I've had
little motivation to find an easier way.
How many bushels do you estimate you'd need per person per year?
Not even a bushel. We have a lot of meat and dairy available otherwise we'd
use quite a bit more. We never try to imitate some animal product with soy
and so enjoy soy foods in their own right.
I've found tofu made from regular commercial soybeans to be okay
Those really big seeded type for eating as green edamame are better for that
than any other type by far. But for tofu and tempeh, I haven't found any
discernable difference.
