The file you are gazing at is named "activity". Since there are a large number
of other "logs" (compile log, install log, etc.). gaze log is to generic and
seems a bit decieving to me. It seems perfectly logical to type gaze activity
to view the log named "activity".

You can tail -f the activity log to watch the output as it comes into the
activity log, this would give you the effect which you describe, as best
as sorcery does it, and probably will ever do such a thing in the near
future. IMO if you really want to "see whats happening" you can use screen
and run sorcery commands in it, then re-attach remotely as many times as
you wish.
