That could be git-hooked (specifically commit-hooked) so that the date
is automatically inserted (or overwritten, but not as nice) at the time
of the commit. That way you wouldn't need to be clairvoyent about when
you were actually committing the change if you start doing all the work,
look at it, and then realize you have to change a lot more before
committing, forgetting to update the date afterwards. It would take some
work getting the hook right initially, so it's a trade-off of initial
investment vs. long-term return.
