OATMEAL Recipes

organic rolled oats, fresh

yellow or white corn grits

prunes, cranberries, raisins, apricots

almonds

brazil nuts

olive oil

herb salt

grated coconut

sunflower seeds

sesame seeds

pumpkin seeds

- cook with plenty of water

when done add:

nutritional yeast (red star yellow flaky)

ground flaxseed meal

honey

blackstrap molasses

vanilla flavored sweetened soy milk

Pear recipe gleanings; delicious things to do with pears.

Pear preserves, like wild strawberry, plum or other fruit, sweet and for

pastries or on toast or with cheese

... and as a condiment sweet/sour pickled pears with ginger (& maybe allspice, cloves, etc.) just as good if not better than watermelon rind pickle

pear jam is another delicacy; I would try mixing pear with wild plum for a tart but sweet jam

Pears make outstanding pies.. especially with a bit of fennel seed and lemon

zest.

And Pears roasted in wine are edible.. and the leftovers make really good

pear ice cream

pears make a great pie. Just slice them into the crust (no need to peel in my opinion, but tastes vary), add sugar and nutmeg to taste and a little flour to soak up excess juices, bake like apple pie


TOFU Recipes

Take one pound block of extra firm tofu, slice in half lengthwise, slice halves lengthwise then cut each quarter ino 1/2" short strips.

Heat wok (hand hammered carbon steel deep round bottom best)

[a chef's wok, 10", deep round ...bottom with tubular steel handle is perfect)

Add plenty of olive oil

Add diced tofu

Add lots of coarsely minced garlic...

Add cider vinegar (small amount) which caramelizes & adds a little sourness, important for the flavor of the finished dish

Add:

1) herb/veg seasoned salt (mild) Trocomare, Herbamare, VegeSal best

Alternative but much spicier (heavier flavor): Gayelord Hauser's SPIKE

2) black pepper, fresh, coarsely ground best

3) Tabasco sauce (or try Pickapeppa Hot Red Pepper Sauce - unbelievably good but expensive, very unique and pungent)

4) Lots of crushed hot red pepper flakes & seeds - cayenne, serrano or habanero or other type of hot pepper

Cook until very slightly browned or just before browning (best); don't overcook

Alternative recipe, Asian version:

eliminate the seasoned salt

add tamari soy sauce

substitute Chinese rice wine cooking vinegar (or Japanese brown rice vinegar or Ume Vinegar)

Add cooking wine or Mirin

Eliminate black pepper

Eliminate Tabasco hot sauce

Reduce the amount of crushed red pepper used in the non asian version

use olive oil or sesame oil or both

Serve with Kim Chee - sliced napa + baby radish is great

- and -

Brown rice, organic long or medium grain, short OK

- add fresh, raw finely diced vegetables to the rice:

parsley

cilantro

green or red sweet bell pepper

celery, lots

carrot, lots

raw garlic, lots

zuccini, finely chopped

finely minced cabbage

- with non asian tofu recipe add

capers

olives

 

Add plenty of good olive oil

and herb/veg seasoned salt (mild) Trocomare, Herbamare, VegeSal best Alternative but much spicier (heavier flavor): Gayelord Hauser's SPIKE

 

Eat with chopsticks.

Serve with green tea.
