Scott,
Not to be argumentative, but why try to remove the pits beforehand.
As I remember it, all the dried jujubes we ate in korea had the pits still
in. And thats what we do with our own. Dry them then remove them as you
eat them (helps limit the rate of consumption.)

For culinary uses in Korean cooking, the jujubes in 'sam gye tang'
(chicken, chestnut, jujube, ginseng and rice soup) had seeds in them.

For dessert decorations, jujube slices were shaved off as a topping,
removing the fresh or dried fruit from the seed in the process. Sometimes
in intricate spirals or swirls.
