If you google quince pie, you will find quite a few. I prefer old type hard
as riocks quinces to the new "edible" ones.

I couldn't find the type of apples I wanted to Thanksgiving pies, so I went
out to pick up some other ones, and came upon quinces.
Can I use them in a pie, maybe mixed with apples (and possibly cranberries)?
What texture do they cook to? How do they taste? Any advice?
